Default Syncronicity with stellar dynamics

Reading with interest about the GOCE mission,it is striking that there
is no syncronicity with the investigation of stellar spherical
deviation in terms of a rotating viscous composition,in short, they
accept thermal 'convection cells' as the dynamic for evolution of the
surface crust -

"Further scientific objectives of the GOCE Mission are the
determination of the structure of the Earth's crust and the mantel
convection as well as the generation of a unique precise global height
reference system, which is essential for the precise monitoring of the
sea-level and the understanding of its changes. "

It is short of impossible to omit differential rotation where a
rotating viscous composition is involved not least that such a
correlation between maximum equatorial speed and the degree of
spherical deviation is already observed via stellar dynamics.

The major global feature of the mid-Atlantic ridge, symmetrical
generation of crust either side of the ridge due to a lag/advance
mechanism of differential shear bands in motion relative to each
other, the orientation of crustal development, the known and observed
differential rotation in rotating viscous composition yet they have
already established a non-rotating thermal 'convection cell' mechanism
even before sending this satellite up !.

How,for goodness sake,do investigators who work on common topics such
as the rotation of a viscous composition manage to bypass each other
in terms of spherical deviation and differential rotation ? -
