Human metabolism is chemical. Mass is conserved.

adjust trajectory/speed during the trip and have to slow their rtation
down to 0 before they detach to peform any such burns?

Depends on the details. If the thrust is largely normal to the rotation
axis, I don't see a problem. If these are small burns to tweak
trajectory, you wouldn't fire up a Raptor anyway, you'd use the reaction
control system thrusters which are going to also be LOX/methane.
