Exactly how does a seed get better because of space exposure?

Default Space Seeds

My students planted the original tomato seeds that had been placed on the
LDEF craft and carried into orbit by "Challenger", then recovered years
later by "Columbia". The tomato plants germinated a few days earlier in the
space exposed seeds, and the leaves had rounded edges, unlike the control
group of seeds. The tomatos produced were fine to eat and appeared no
different.
Too bad more student involvement experiments with similar items exposed to
radiation and zero G conditions haven't evolved from that first one.
