Does the asteroid Ceres rotate and how quickly does it rotate about its axis?

and get all known lightcurve data for minor planets (compiled by
former JPL bod Al Harris), along with the references to the published
data. This is one of a number of on-line versions of this list. The
referenced version of the lightcurve list is special, because it is linked
into ADS, so if you follow the link, for example, for the second Ceres
reference, you get taken the lightcurve references list. If you then
follow the link from reference 4 you can get to an ADS page which will
allow you to read the entire published paper.

Yes, and its rotational period is 9.075 hours, according to JPL's
Horizons site.
