Default Food Crops on the Moon - What to grow?

Some things to ponder:

- Greatest output of O2 for resources consumed.

- Food and other beneficial substances produced, (what do you do when
the stems and roots start to build up?)

- For that matter, what of composting and recycling (cuss words down
here on Earth).

- Can a (stronger?) case be made for gene engineered organisms in a
non-terrestrial enviroment? Perhaps in a low gee enviroment and with
super abundant sunshine the output won't requier fiddling with the DNA.

- Is hydroponics the end all or will soil production itself be important?


I can envision having every otherwise blank surface (walls and ceiligs)
being covered in some sort of vine or ivy, esp. in crew quarters.


Thoughts for discusion, have at it.
