Was a backup built along with the primary Cassini orbiter?

No, it's been quite some years since JPL & co. routinely built complete
backup spacecraft. I expect there were backups of major subassemblies,
against the possibility of last-minute hardware damage, but there wasn't a
spare spacecraft.

Probably only an engineering model currently used for
testing flight software.
