It depends on your imaging device.
With a webcam, shot it in black and white. Now if you have an digital
camera, you can use color without effort.

Certainly for detailed shots, there is some colour to be seen in places.

There are some amazing effects that can be done if you shot in colour. By
enhancing the colour you can make a b&w Moon appear with its seas and hills.
