I'm trying to find readings on ambient temperature, day/night temperature
swings, pressure, wind velocity, stuff like that...

I haven't seen any mention of external temperature and ambient pressure
sensors on the MER's. MPF had them on the lander which also included a wind
speed experiment, but the MER's seem to be focused on the mineralogy. I am
sure they have internal temperature sensors which provide part of the
engineering data though.
