Default Planets - gas giants

If the larger planets in our solar system (or elsewhere) really are huge
balls of gas with no solid surface is there any gravitational pull on an
object (such as a space probe) towards whatever serves as a surface or
planetary centre? Couldn't a fast moving object go straight through?
