If the weather is too bad for Kennedy on the first chance, does anyone know
the subsequent opportunities and when they might switch to Edwards?

If the weather is bad, they also could decide to wait one or 2 orbits
and then come home. Also a decision could be made the lengthen the
mission with one day, and if the weather is still bad at SLF, then a
landing at Edwards would be the best to do.
NASA prefers to land at Kennedy because of the transport of the orbiter
by SCA will cost a few days (up to a week if I am not wrong) and a lot
of money.
Ferry-ing the orbiter from California to Florida has to be done at low
altitude (I read somewere the altitude should be around 3000 feet).
Also an other (military) plane will lead the transport 100 miles ahead,
to check the weather during the transport..
